On Saturday afternoon, Anna and I made some strawberry cupcakes from The Joy of Vegan Baking cookbook. Not only was the batter delicious, I FINALLY got the right consistency on the frosting. I was doing two things wrong: (1) The non-dairy butter indeed needs to be room temp. No cutting corners :) (2) Not enough sugar - it gels the frosting together.
